Number of Servings: 4

Ingredients

    8 eggs (often I only use 4 eggs and then add liquid egg white)
    3 tablespoons 1% milk
    1 cup green pepper (or mix of coloured peppers), diced
    1 cup celery, diced
    1 cup onion, diced
    2 tsp extra virgin olive oil
    1/2 cup shredded cheddar cheese (or mix of cheeses)
    12 johnsonville breakfast sausages- brown sugar & honey flavour
    1/2 cup chopped tomatoes
    3-4 diced green onions
    McCain Hash Browns - approx 3 cups (enough to make 2 cups cooked)
    1 tbsp margarine or butter

Directions

Makes 4 servings

Brown sausages in frying pan on low heat to reduce spattering. Discard oil left in pan. Cut sausages into small, bite-sized pieces. Set aside on paper towel to absorb extra grease.

Meanwhile, melt tbsp of margarine in skillet. Add hash browns.

Stir-fry onions, peppers and celery in 1-2 tsp olive oil until tender. Add eggs and milk to fry pan, continuously stirring so the eggs "scramble". Add in cooked chopped sausages.

Divide hash browns into 4 portions. Top each portion with 1/4 of the scrambled egg mixture. Top each with tomatoes, chopped green onion and sprinkle cheese on top.

    I'm not sure what McCain Hash Browns are. Are these frozen hash browns, shredded or chunky, etc? - 1/12/11

    You could use any kind, but the ones I use are frozen and they're chopped into tiny squares.
