Introduction

Very simple arrabiata sauce. Goes great in a lasagna and with meatballs. Very simple arrabiata sauce. Goes great in a lasagna and with meatballs.

Ingredients

    1400g crushed tomatoes or passata (2x700g bottles)
    4 garlic cloves, crushed
    2 hot chili peppers, chopped finely *
    2 cups onions, chopped finely
    1 cup button mushrooms, finely diced
    1 shredded carrot (about 1 cup)
    1 shredded zucchini (about 1 cup)
    125ml red wine
    1 tbsp olive oil

    * hot peppers - note that not all peppers are created equal. You may want to start with just one and test 'hotness' or omit if making kid friendly sauce.

Directions

Makes about 12 1/2 cup servings.
Saute the onion, garlic and chili peppers in hot oil until soft. Add tomatoes and red wine. Simmer over med-low heat for 1 hour. Salt to taste. Let cool then puree in a blender or with a hand mixer until smooth (no one will know how many veggies there are in here once pureed).

Optional: Spice it up with 1 tbsp of oregano for more 'italian' taste.
