    2 cups brussels sprouts, trimmed, halved, and sliced
    3.5 oz shiitake mushrooms sliced
    1/4 cup reduced sodium soy sauce
    1 Tbsp sesame oil
    4 (6 oz) salmon filets, boneless and skinless)
    12 thin slices of fresh ginger
    1 Tbsp sesame seeds
    1/4 cup scallions
    1/4 cup cilantro, chopped


Preheat oven to 450.

Stir together sprouts, mushrooms, soy sauce, and oil.

Tear off 4 sheets of foil, about 14" long. Spoon 1/4 of vegetable mixture onto half of each sheet, leaving a margin of about 2" on the edges. Place a fish filet on top of the vegetables then put 3 slices each of the ginger on each filet. Season to taste with black pepper.

Fold over the other half of the foil over the fish. Fold over edges to seal and flatten, without squishing the fish. Fold over edges twice more each to seal. Repeat with remaining packets.

Place packets in 1 layer on a baking sheet and bake 18 minutes.

Cut tops of packes with a knife, being careful to avoid the steam, and spoon fish and vegetables onto plates. Top each filet with 1/4 of the sesame seeds, cilantro, and scallions.
