    1 tbsp (15ml) vegetable oil
    1.5 lbs (750g) lean ground beef
    1 can stewed tomatoes
    1.5 (375ml) medum salsa, divided
    1 red bell pepper, chopped
    1/4 cup (50ml) raisins
    Pinch ground cinnamon
    1 garlic clove, crushed
    10 corn or flour tortillas
    1 cups (375ml) grated low fat mature cheddar


In heavy frying pan, heat oil over med-high heat. add beef & saute for 3 - 5 minutes or until no longer pink.

Add tomatoes, 3/4 cup (125ml) of salsa, red pepper, raisins, cinnamon & garlic; bring to a boil. Reduce heat and simmer for 10 mins or until most of the liquid has evaporated.

Spoon 1/2 cup (125ml) beef mixture down center of each tortillas; roll up and place seam side down in greased baking pan. Spoon remaining 3/4 cup (175ml) salsa evenly over enchiladas. Cover pan with foil.

Bake at 350F for 20 mins or until heated through. Sprinkle with cheese and place under broiler until cheese is melted!
