A yummy dessert just like brulee without all the cream and eggs. A yummy dessert just like brulee without all the cream and eggs.
Number of Servings: 1


    1/2c yogurt, plain, low fat
    5 tsp sugar
    1/2c raspberries


1. Marinate the raspberries in 1 tsp sugar overnight.
2. Place raspberries in the bottom of a small heat proof ramekin
3. Pour yogurt on top.
4 Top with the remaining 4 tsp of sugar
5. Place the ramekin under a very hot broiler to caramelise the sugar. Alternatively, you can use a mini blowtorch.
6. Let the caramel cool before serving but do not refrigerate as the caramel will go sticky.

Use other fruit in the base
Mix the yoghurt with coffee powder and leave out the fruit.
Use raw or demerara sugar and don't worry about carameling the sugar - the crunchy sugar on top is delicious and feels quite decadent!
