    10 ounces cooked chicken breast, diced
    1 clove garlic, mince or pressed
    1/2 cup onions, chopped
    1/2 cup red bell pepper, chopped
    8 ounces mushrooms, chopped
    7 TB of light 1/3 less fat chive and onion cream cheese (1/2 tub), softened
    1 TB brummel and brown
    8 sheets phyllo dough
    Oil spray


Preheat oven to 375 degrees

Saute vegetables in brummel and brown over medium heat until softened.

Combine chicken, cream cheese and veggies in small bowl.

For each wellington use two phyllo sheets, folded in half and stacked on top of each other. Work with one sheet at a time and make sure remaining dough stays covered with a damp towel to prevent drying out, spray dough with oil spray, like pam. You could also brush with butter (real butter) or olive oil for additional calories/fat.

Measure out 1/2 cup of chicken filling for each wellington, place in middle of dough and fold sides over to make square packet. Repeat with remaining filling and dough to make 4 packets.

Bake for 20-25 until golden brown.

You could also use cooked salmon or another meat. Variations: Italian seasoning and freshly grated Parmesan
Roasted chilies, smoked paprika, cayenne and cheddar cheese
