Great winter salad when sick of lettuce! Keeps very well. Great winter salad when sick of lettuce! Keeps very well.
Number of Servings: 4


    1 bunch celery (2 1/4 lbs)
    1 bunch radishes, trimmed & cut into 1/8" slices
    10 pitted black or Kalamata olives, halved
    1 1/2 tbs extra virgin olive oil
    1 tbs chopped fresh chives
    2 tsp fresh lemon juice
    1/8 tsp black pepper


Remove outer dark green ribs of celery and reserve for another use. Remove leaves and reserve in a bowl. Cut off & discard base of celery heart, then cut rest of bunch into 1/4" slices and add to celery leaves and remaining ingredients. Toss to coat.
