Ingredients

    1 lb boneless, skinless chicken breast, cubed
    .5 cup sliced onions
    2 tbs olive oil
    1 16 oz package frozen vegetables (Trader Joe Harvest Hodgepodge
    .5 cup sliced almonds
    1 tsp Mrs. Dash Original
    2 tbsp La Choy Lite Soy Sauce

Directions

Saute cubed chicken and sliced onions in olive oil. When chicken is fully cooked, add frozen vegetables, pineapple with juice, sliced almonds, and Mrs. Dash. When everything is hot, add soy sauce. Serve over brown rice. Makes 4 servings.
