Number of Servings: 4

Ingredients

    6 (6 oz) pieces beef tenderloin, 1-1/2 to 2 inches thick
    3 tbsp crumbled blue cheese

    Marinade:
    1 tbsp olive oil
    1/4 cup red wine
    1 clove garlic, mashed
    1 tbsp tomato paste
    1 tbsp chopped fresh parsley
    1/2 tsp black pepper

Directions

Mix marinade ingredients in a large baking dish. Coat both sides of meat with marinade and let sit in refrigerator for 30-45 minutes. Grill tenderloin over medium-high heat or broil 6 inches from heat source, until cooked to taste. Top with blue cheese and cook until cheese melts.

    the nutrition is based upon a 9oz steak.....cut the ingredients in half and you have half the cals.....approximately 366 cals each....that with a garden salad and you have a filling meal for under 400 cals....and really tasty one at that!! - 11/2/10
