Easy BBQ chicken salad made with chicken breasts Easy BBQ chicken salad made with chicken breasts
Number of Servings: 3

3 boneless chicken breasts (about 4.8 oz each)
    Approx 3 cups shredded lettuce
    Raw tomato (3 servings)
    Cucumber (1 whole)
Reduced fat shredded cheddar cheese (.75 cup)
Hidden valley ranch dressing (approx 6 Tbsp)
    BBQ sauce (approx 8 Tbsp)

1. Throw the chicken breasts onto a frying pan with no-stick spray. Cook on medium-heat until thoroughly cooked.
Feel free to add any desired seasoning/spices. I like seasoned salt and cajun.

2. While the chicken starts cooking, prepare all the veggies

3. The chicken should be fairly well cooked at this point. Now, slice it all up into small, edible chunks. After this, pour your barbecue sauce over the chicken. Be careful, this is where they calories can add up.

Don't like BBQ sauce? Leave it off or use some other type of sauce.

Stir thoroughly and mix with the BBQ sauce.

4. Once the chicken is fully cooked and covered with BBQ sauce, divide the chicken and put it on the salad.

Once the chicken is laying on top of the veggies, sprinkle on any desired cheese. You can use any type of cheese if you like something different.

Number of Servings: 3
