    6 cloves garlic, minced
    1 sweet potato, diced
    1 potato, diced
    1 summer squash, diced
    1.5 cups cauliflower, diced
    2 tbsp olive oil
    1 tbsp curry powder
    1 tsp tumeric
    1 tsp cumin
    18 egg roll wrappers


Mix all ingredients except wrappers in bowl. Seal in foil packet and bake at 450 F for approx. 45 minutes (until potatoes are tender).

Place 2 heaping tablespoons of vegetable mixture in the centre of each egg roll wrapper and fold tightly.

Place samosas on a baking sheet sprayed with cooking spray. Lightly spray the tops of the samosas.

Bake at 375 F until wrappers are golden.

Makes 18 samosas
