Introduction

Ingredients

    Bacon, 2 slices
    1 medium onion, sliced thin
    2 cans Stewed Tomatoes
    2 bags frozen string beans, whole
    salt, pepper to taste

Directions

1. in an extra-large frying pan, cook bacon until crisp and set aside on paper towels. Drain all but 1 tbsp of the bacon fat.

2. Saute onion in the bacon fat until soft. Add the two cans of stewed tomatoes and cook on medium-high until the juice reduces significantly.

3. Add string beans and cook until the beans are soft. Crumple the bacon over the top & serve!

    I like the ease of this recipe but I don't want pork. I will try a substitution of chicken broth for flavor,and sautee the onions in a little "I can't believe it's not butter spray". - 10/7/08
