    0.5 Medium Onion, Peeled & Separated Into Rings
    6 Red Potatoes, Cut Into Bite Sized Pieces
    6 Carrots, Peeled & Cut Into Bite Sized Pieces
    4 Zucchini, Peeled & Cut Into Bite Sized Pieces
    2 Tbsp. Smart Balance Oil


Pour all veggies into a large rectangular cake pan. Drizzle on oil and turn veggies to coat. Sprinkle with salt, pepper, and any other seasonings you like.
Broil @ 400 degrees, turning occasionally. Veggies are done when they are fork tender.
