Introduction

Chicken stewed in a tomato, onion and red pepper sauce. Chicken stewed in a tomato, onion and red pepper sauce.
Number of Servings: 6

Ingredients

    4, 5 oz Boneless/Skinless Chicken Breasts
    1 can crushed tomatoes
    1 large red pepper, diced
    1/2 cup diced onion
    2 Cloves of Garlic, crushed
    1 Tbs Italian seasoning

Directions

Pour crushed tomatoes into 4 qt crock pot. Add diced red pepper, diced onion and crushed garlic. Add Italian Seasoning and stir to mix. Push Chicken into sauce.

*note, I did not add salt or pepper, you can add this to taste at the table.

Cook on high for 1 hour, then reduce to low for 3 hours or until chicken is cooked through.

Serve over rice or noodles.

Serving size is 1 breast and about 3/4 cup sauce.
