    Enchilada Sauce:

    1/4 c canola oil
    1 c tomato sauce
    1 tsp mexican seasoning
    1/2 tsp garlic powder
    1/2 tsp chili powder
    juice from 1 4oz can of jalapenos

    2 chicken breasts, boiled and shredded
    1/4 onion, chopped
    4oz jalapeno diced (canned, drained into enchilada sauce)
    4 tortillas
    1 c shredded cheese
    +1/2 c of the prepared enchilada sauce (above)


Makes 4 enchiladas for 2 peoples.

To make sauce, combine ingredients and shake well.

To prepare enchiladas, mix chicken, onion, jalapeno and 1/2 cup of sauce. Divide filling in to 4. Fill tortillas.

In an 8x8 dish, lay filled tortillas down.Top with remaining sauce and then cheese. Bake at 350* for 30 minutes.

Garnish with chopped green onion and sour cream.

Serve with mexi-corn.
