    2/3 cup onion, chopped
    2/3 cup celery, chopped
    2 T. butter
    2 cans 98% fat free cream of chicken soup
    8 oz. Cheez Whiz
    3 C. cooked white rice (1 C. uncooked)
    3 large chicken breasts, cooked and diced (12 ozs.)
    3 cups partially cooked broccoli


Cook rice according to package.

Saute onion and celery in butter. Stir in soup and Cheez Whiz and cook until melted and well mixed.

In bottom of 9 x 13 baking dish, layer in the following order:
Rice, Chicken, Broccoli and pour sauce ver top.

Cook at 350 degrees for one hour.
Makes 8 servings.
Freezes very well.

  • this looks very good, but I will have to find substitutes for ch soup and cheese as my husband is lactose intolerant and we use Goat milk and cheeses, it's an aquired taste, but I'm getting used to it :) - 1/15/11
