I came up with this recipe because I wanted paella and seafood risotto. It's a delicious fusion of american comfort and spicy flavors. YUM!!! Ingredients

White Rice, long grain, 1 cup
Turkey, Ground turkey, 93% lean, 8 oz
Neufchatel Cheese, 1 oz
Milk, 2%, .5 cup
Spinach, frozen, 0.5 cup
Cauliflower, frozen, cooked, 2 cup
Carrots, raw, 1 medium
Yellow Sweet Corn, Canned, .5 cup
Green Peppers (bell peppers), .65 cup, strips
Smart Balance, Smart Balance Light Buttery Spread, 1.5
Seafood Combo Mix (surimi, octopus, squid and shrimp), 1 lb
Serrano Peppers, 1 pepper
Directions
Prepare rice in large pan/wok (i was out of broth so I seasoned the water with celery salt and lemon pepper)
In separate pan, sautee turkey, onions and peppers (i added a dash of italian seasonings).
When rice is nearly cooked, add all ingredients (except seafood, neufchatel and milk) to wok and cover for about 10-15 minutes and let all vegetables cook
Add seafood, neufchatel and milk (i would normally use skim, but I was out) with salt and pepper to taste and cover for another 5 minutes or so. Everything should melt together and become a delicious, creamy delight. Enjoy!!
