    3-4 Large Summer (yellow, croockneck) squash
    1 small onion
    2 cups cheddar cheese
    1 can reduced fat cream of chicken soup
    1.5 cups crushed saltine crackers
    1 egg
    1/2 cup Fat Free Milk
    salt and pepper


Cut the squash and the onion into rounds and then cut the rounds in half. Boil the squash and the onion together for 15-20 minutes or until soft.
Drain the squash and onion.
In a baking dish, mix the drained squash and onions, soup, milk, egg, 1.5 cups of cheese, and 1 cup of crackers. Salt and pepper to taste.
Bake at 350 degrees for 45 minutes. With 5 minutes to go ad the remaining crackers and cheese to the top of the cassarole and finish baking.
