Ingredients

Chicken, 5.5 lbs
Eggs, 3 large
Progresso Dry Bread Crumbs, 1.5 cups
Canola Oil, 2 cups
Directions
On one plate, break open the eggs and set aside. On another plate, put the bread crumbs out. Cut the chicken up in strips for frying. Heat the oil in a deep skillet (2 cups or more is about enough to make the oil deep enough to fry the chicken, the chicken will not soak up all the oil so I did not use the oil in the nutrition calculations, but used fried chicken breast instead).
Dip the chicken in the egg first, then cover the chicken with bread crumbs and put chicken in skillet. Continue with each piece. Cook until golden brown or until chicken is cooked thoroughly. Yields about 15 or more strips of chicken. (Nutrition calculation based on 15 strips.)
**Canola oil can be substituted with whatever oil you wish to use, it's just what we had on hand**
