    1.5 cups flour
    3/4 cup Mill Flaxseed Meal
    3/4 cup oat bran or rolled oats
    1 cup brown sugar
    1 tsp baking powder
    2 tsp baking soda
    1/2 tsp salt
    2 tsp cinnamon
    1.5 cups finely shredded carrots
    2 peeled and shredded apples
    1/2 cup craisins
    1 cup chopped nuts
    3/4 cup milk
    2 beaten eggs
    1 tsp vanilla


Mix all dry ingredients. Shred apples and carrots and fold into the dry ingredients. Chop nuts and add nuts and craisins to the mixture. In a separate bowl, beat the eggs, add milk, and add 1 tsp vanilla flavor. Pour over the dry ingredients and mix until just moistened. Do not overmix. Bake at 350 for 15-20 minutes.
