Introduction

I kind of gave up on muffins when I started watching calories, but I love them. This recipe makes 12 very yummy, large muffins with reasonable calories, a good amount of fibre and reduced fat! I cut the sugar in the original recipe by more than half, but used sweetened cranberries and coconut. I also used half the oil called for in the original recipe and added in the applesauce. Enjoy! Ingredients

    *Whole Wheat Flour, 2 cup
    white sugar, 1/2 cup
    Baking Soda, 2 tsp
    Cinnamon, ground, 2 tsp
    Egg, fresh, 3 large
    Grapeseed Oil, .5 cup
    Mott's Applesauce, Cinnamon, single serve container
    Vanilla Extract, 2 tsp
    Carrots, raw, 2 cup, grated
    Apples, fresh, 1 cup, quartered or chopped
    Cranberries, dried, sweetened (craisins), .5 cup
    Coconut, sweetened, .5 cup
    Sunflower Seeds, without salt, .5 cup, hulled

Directions

In a large bowl, mix together flour, baking soda and cinnamon. Add carrots, apples, cranberries, coconut and sunflower seeds and toss to mix thoroughly. In a separate bowl, whisk together eggs, oil, applesauce and vanilla. Add wet to dry and mix until just combined.

Using a 1/3 cup measure, divide batter into 12 muffin tins and top up the 12 with any remaining battter.

Be sure to use muffin papers and/or spray your pan well.
Bake at 350F for approximately 25 minutes or until toothpick comes out clean.

Makes 12 large muffins.
