This easy eggbake is low calorie and low carb. This easy eggbake is low calorie and low carb.
Number of Servings: 4


    2 cups 100% eggwhites
    1 cup spinach
    1 cup peppers and onions
    2 tbs lowfat cream cheese
    1/4 fat free cheese any kind you like I used mozzarella
    salt and pepper to taste


sautee the onions, peppers, and spinach in a pan that has been sprayed with cooking spray.
Beat the eggwhites and lowfat cream cheese in a bowl.
Put all the veggies and the fat free cheese in a 8 by 8 baking dish that has been sprayed with pam.
Add the fat free cheese to the veggies.
Lastly add the eggwhite mixture to the baking dish and gently combine the veggies and eggwhites.

Cook at 350 for approx. 40 min. let cool 1/2 hour so the eggs shrink and it is easy to get out of the pan.
makes 4 servings.
