Introduction

Ingredients

    1 lg yellow or white onion
    1 zuchini
    Mushrooms, fresh, 1 cup
    Cilantro
    Scallions (green onions)
    1 Avacado
    Red Ripe Cherry Tomatoes (any tomoato will do)
    Rice, Kraft Minute Whole Grain Brown Rice,
    *Crushed Chili Pepper Flakes
    Spinach, fresh, 2 cup
    1 lime
    *Soy Sauce, Light, 2 tbsp

Directions

Cook 2 servings of brown rice according to directions and set aside.

Put 1 chopped onions In a wok (or skillet) allow to cook until semi clear (about3 minutes)
, add sliced mushrooms (about a cup) and sliced zuchini (cook 2 min)
Add spinach until wilted and add crushed red pepper(optional) and cilantro
add rice
(cook 1-2 minutes)
add 2 tbls light soy sauce
(cook 1 min)
Mix in cup of sliced cherry tomoatos
(cook 30 secondas)
squeeze juice of half a lime
Plate
add sliced avacado & scallions to top of dish and enjoy!

Salt & pepper to taste

*Note be very careful with red pepper flakes you can always add more but you cannot take them out :)

**Also try this dish with shrimp, scallops, or chicken
