Introduction

Number of Servings: 4

Ingredients

    1 acorn squash
    1/2 tube spicy sausage
    1/2 cup brown sugar divided in 2
    1/4 sweet onion, chopped small

Directions

Pre-heat oven to 350.
Wash & cut squash in half. Place them cut side down in a baking dish with apx 1in of water in it. Bake for 45 min.
In the mean time, in a skillet, brown onions & the sausage, breaking it up in small chunks. Let it stand.
When squash is done, remove from pan cut side up & allow to cool to room temp. Sprinkle cooled squash with half of the brown sugar.
Spoon sausage into squash halves. Sprinkle halves with remaining sugar. Return to baking dish and bake for 15-20 min until sugar is melty.
Makes 4 servings.
*Turkey sausage can be used to lower calories.
