A quick and easy prawn curry made from readily available foods. A quick and easy prawn curry made from readily available foods.
Number of Servings: 1


    Prawns (Frozen or Fresh) 100g
    Half small onion sliced finely
    3 Ripe Tomatoes quartered
    Half Green Pepper Diced
    Olive Oil 1tbsp
    Curry Powder Medium hot
    Rice 80g boiled


Heat the olive oil in a pan and add the sliced onions, cook gently until transparent. Add a level tbsp of curry powder and cook for a few seconds then add the tomatoes and pepper and simmer gently, add 2-3 tbsp of water for fluid. Simmer for five minutes until tomatoes soften then add the prawns and gently simmer for a further 20 minutes.

Boil a pint of water in a saucepan, when boiling add the rice and cook until tender but not over cooked, approximately 15 minutes. Strain the rice and pour fresh boiling water over it to remove the excess starch.
