    - thin chicken breast ( or cutlets) cut in pieces
    - 2 tablespoons extra virgin olive oil
    - 1/2 teaspoon salt
    - 1/4 teaspoon salt
    - 1 green bell pepper
    - 1/2 yellow onion
    - 1 cup sliced mushrooms, fresh
    - 1 clove garlic
    - 1 pouch of boil in bag brown rice
    - 1 (26 ounce) jar tomato basil pasta sauce
    - 2 tablespoons shredded parmesan cheese


1.)Cut chicken into bite size pieces. Pre-heat large skillet on medium high. Boil water for rice.
2.)Add olive oil to hot skillet. Swirl oil in skillet to coat. Add chicken to skillet. Add vegetables (onion, green pepper, garlic and mushrooms) Sprinkle salt and pepper over veggies and chicken. Cook 8 - 10 minutes stirring occassionally. Make sure chicken is brown and veggies are tender
3. Place rice in boiling water. Cook according to directions on box.
4. Reduce heat on chicken to medium and stir in tomato sauce. Sprinkle with parmesan cheese. Cook 2 - 3 minutes covered. Serve over rice.
