    1 medium eggplant
    1 tsp. minced garlic
    1 cup Ragu Old World Style Spaghetti Sauce
    1/2 cup Fiber One Cereal (ground)
    1/2 cup Parmesan Cheese
    1/2 cup Egg Beaters


Mix Fiber One Cereal & parmesan cheese in a shallow bowl. Slice eggplant in 1/2" slices and dip in Egg Beaters and then cereal and cheese mixture. Spray a cookie sheet and place dipped eggplant slices on cookie sheet and bake at 350 for 30 minutes. Remove from oven. Stir garlic into spaghetti sauce and cover bottom of 9" square pan with very thin layer of spaghetti sauce. Layer eggplant slices on top of sauce and then cover with remaining sauce. Top with mozzarella cheese and bake at 350 until cheese is melted. Let cool for ten minutes and serve.
