    2 cans of chickpeas, rinsed and drained
    1 cup chopped onion
    1/2 red bell pepper, chopped
    2 cloves of garlic minced
    1 carrot, diced
    1/2 tsp ground cumin
    1/2 tsp ground coriander
    1/2 tsp paprika
    salt and pepper to taste


Makes 8 1/2 cup servings
Spray skillet with cooking spray and heat over medium heat. Add onions and cook for 2 minutes. Add garlic, red bell pepper and carrots. Cook until softened, about 5 minutes. Add spices and chickpeas and cook until beans are warmed.
