    1 C quinoa
    2 C water
    1 green bell pepper, diced
    2 tomatoes, diced
    1 diced onion
    1/4 C reduced fat Feta
    1 Tbsp olive oil
    parsley, if desired


Bring 2 cups of water to a boil. Add quinoa and reduce heat. Cook for 10 minutes until most of the water is absorbed. Drain and set aside.

Heat oil in a large pan. Add onion and green pepper and saute until soft about 5 minutes. Add tomatoes and cook for an additonal 6 minutes. Stir in quinoa and heat through. Remove from heat and add feta. Sprinkle with parsley if desired.
