Ingredients

    Onions, raw, 2 cup, chopped (remove)
    Louis Rich Turkey Bacon (1 slice), 5 serving (remove)
    *Potato white - 1 medium 5.3oz serving size, 6 serving (remove)
    Chicken Broth, 33 fl oz (remove)
    Bay Leaf, 1 tsp, crumbled (remove)
    Salt, .5 tsp (remove)
    Pepper, black, .25 tsp (remove)
    Fat free half and half, 1 cup (remove)
    Scallions, raw, .5 cup, chopped (remove)
    *Flavorite Mild Cheddar Shredded Cheese, .5 cup

Directions

Coat a large soup pot with cooking spray. Saute Onion for 3 minutes over med. heat. Add bacon and saute for 3 minutes. Add potatoes, chicken broth, bay leaf, salt, and pepper. Turn heat to high and bring to a boil; then reduce heat to a low boil for 20 minutes. Remove bay leaf. Remove 4 cups of coup and puree in a blender or with a handheld immersion blender. Pour pureed soup back into pot and add half-and-half. Garnish with scallions and cheddar cheese.
