Ingredients

    Cake:
    2 c. sifted flour
    2 c. sugar
    20 oz. crushed pinapple, undrained
    2 eggs
    1 t. baking soda
    1 t. salt
    1 t. vanilla extract or lemon juice

    Frosting:
    8 oz. cream cheese
    1 stick butter
    2-3 c. powdered sugar
    1 t. vanilla extract or lemon juice

Directions

Mix all cake ingredients in a bowl. Bake in a greased 9" x 13" pan at 325 for 30-40 minutes, or till toothpick inserted in center comes out clean.
Meanwhile combine all frosting ingredients, adding enough powdered sugar till desired constistancy.
Frost cake while still warm- so it doesn't tear cake.
