Introduction

Hearty low carb vegetarian soup - great for taking the chill out of a winter's day. Hearty low carb vegetarian soup - great for taking the chill out of a winter's day.
Number of Servings: 8

Ingredients

    1 cup green or brown lentils
    1 cup celery, chopped
    1 cup onion, chopped
    1 cup carrots, sliced
    3 Knorr vegetable bouillon cubes
    10 cups water
    2 tsp curry powder
    1 tsp cinnamon
    4 bay leaves
    4 cloves
    1 inch fresh ginger root
    sprinkle of cayenne pepper (optional)
    4 cups green cabbage, chopped
    1 cup cauliflower, chopped
    1 cup low salt canned diced tomato w/juice
    1 tsp dried oregano
    1 tsp dried basil

Directions

Add all ingredients thru cayenne pepper to soup pot and bring to boil; reduce to simmer until lentils are almost done (about 15 min) Then add cabbage, cauliflower, tomatoes, basil, oregano and simmer another 10 min or so until cabbage is cooked (lentils should be done at this point too)
Remove bay leaves, cloves and ginger before serving.

Makes about 8 two cup servings. Good for the whole week!
