I think I like this better than mashed potatoes! The nutritional info may vary depending on the brand of butter or margarine you use or if you use light cream cheese instead. This would also be good with flavoured cream cheeses like roasted red pepper or chive!

Ingredients

    3 cups cauliflower cut up
    2 teaspoons margarine or butter
    2 tbsp regular cream cheese
    1/4 tsp garlic powder
    Pepper, black, 1 dash
    Salt, 1 dash

Directions

Steam the cauliflower until very tender then puree it with all the other ingredients. You can also mash it but then it's pretty lumpy and I wouldn't really call it a puree. Either way it's delicious!
