    2 lbs boneless, skinless chicken breast, cut in 1/2" pcs
    1 tsp salt
    1 tsp pepper
    1 1/2 T canola oil
    2 T curry powder
    1 medium onion, chopped
    1 C green pepper, chopped
    3 cloves garlic, pressed
    1 13.66 oz can lite coconut milk
    1 14.5 oz can diced tomatoes
    1 8 oz can tomato sauce
    3 T sugar
    2 T corn starch
    1/4 C cold water


Season chicken pieces with salt and pepper. Heat oil and curry powder in large pot over medium-high heat for 2-3 minutes, until curry starts to turn a reddish color. Add onion, garlic and green peppers, cook til tender. Add chicken, tossing to coat with curry oil. Reduce heat to medium and cook until chicken is no longer pink. Pour coonut milk, tomatoes, tomato sauce and sugar into pan and stir to mix. Cover and simmer. Combine corn starch and 1/4 cup cold water in a small bowl. Stir til dissolved. Add to pot. Stir, then return to simmer for 15-20 minutes. Enjoy!
