Introduction
These truffles are a good once in a while treat since they contain a fair amount of saturated fat. BUT, they’re better than giving in to "real" truffles! These truffles are a good once in a while treat since they contain a fair amount of saturated fat. BUT, they’re better than giving in to "real" truffles!Ingredients
- 2 oz. high quality unsweetened chocolate (like Valrhona or Sharffen Berger)
- 4 tablespoons sucralose (such as Splenda)
- 4 tablespoons butter, at room temperature
- 4 tablespoons cream, at room temperature
- 2 teaspoons vanilla extract
- 1 oz. crushed macadamia nuts
Directions
1. Melt the chocolate in a double boiler. Stir in the sweetener and cool to room temperature. Mix in the butter until smooth. Stir in the cream and vanilla.
2. Spread chocolate mixture into a loaf pan. Chill until firm.
3. Scrape chocolate into small servings using a teaspoon. Roll into balls and then coat with nuts. Store in the freezer.
Serves 4 .

Why do so many people think you have to go low fat to get healthy? The opposite is true. Yes, it is a lot of calories, but don't you know the meaning of moderation? The fats are healthy ones (PLEASE don't substitute margarine for the butter!) and there are very few carbs. My bloodsugar will like it. - 11/9/11
