    2 3oz Mahi Mahi filets
    1/4 cup toasted almonds, ground
    1/4 cup whole wheat flour
    1 tablespoon olive oil
    Pinch of sea salt
    1 tsp dried herb of choice (Tarragon works well.)


Combine ground almonds, whole wheat flour, herbs, and salt.

Coat mahi filets with almond mixture and let sit for 5 minutes.

Heat olive oil in a non-stick skillet.

Place filets into heated skillet and cook 3-4 minutes per side, until coating is golden brown and fish flakes easily. (If filets are particularly thick, you can finish the fish in a pre-heated 400 degree oven.)
