Ingredients

    1 large butternut squash
    2 tsp chicken boullion
    1 cube of veggie boullion
    1.2 cup fat free milk
    1 tsp of ground nutmeg
    salt and pepper to taste
    3 cup water

Directions

Makes 4-2 cup servings. Split squash in half and roast at 375 for 40 minutes or until soft. Allow to cool until able to handle. Meanwhile, bring water to boil in large pot and add boullion. Add squash pulp. Bring to boil and then allow to cool. Using immersion blender, blend until smooth. Or, process in blender. Add nutmeg and salt and pepper to taste. Stir in milk.
