15 Eggs large,
1.5 cup 1% milk
1/4 C Bread crumbs
1 cup chopped veggies (1 red pepper, 1 green pepper,1 onion)
1 1/2 C Ham extra lean (in small cubes)
1 C yellow beans
1/2 tsp chili spice or Epicure Nonya Mix
1/4 C Parmesan cheese grated or light feta cheese and toamtoes (italian) are very good addition ...For the meat lovers, sausages or cooked canadian bacon (choppes in the food processor) is a nice touch - add up to the original recipe or instead of ham! - All the above are not in calculation... adjust tracking accordingly!
Mix eggs and milk together. Set aside.
Cover the bottom of greased (NF Spray) 12X8 pan with bread crumbs.
Cut veggies and ham, add to the pan. Cover with the egg mix.
Cook in the oven (350 F) for 45 min.
8 large servings.
