    2 Tbls butter
    1 c diced carrots
    2&1/2 c chopped leeks
    1 c chopped celery
    1/4 c flour
    8 c chicken broth
    30 oz chicken breast (poached and shredded - (do ahead step!)
    1/2 c wild rice (uncooked)
    1/2 c brown rice (uncooked)
    1/2 tsp salt, or to taste
    3/4 c half and half, hot
    1/4 c minced chives
    3 Tbls chopped parsley


Makes 8 servings (about 1 & 1/2 cups each)

Heat butter in a soup pot over medium heat. Add the carrots, leeks, and celery. Cook until softened, about 5 minutes.

Reduce heat to low, add the flour, and stir well. Cook gently, about 3 minutes, stirring constantly.

Add the broth gradually, whicking well with each addition to eliminate flour lumps. Add shredded chicken. Bring to simmer.

Add the wild and brown rices. Add salt. Continue to simmer until the rice is tender, but still somewhat chewy, about 45 minutes.

Stir in the heated half and half. Season with salt. Garnish with chives and parsley
