    2 teaspoons olive oil
    1 medium-large onion, cut into medium dice
    2 cloves, garlic, chopped
    1 red bell pepper, stemmed, seeded, and cut into medium dice
    2 large carrots, peeled and sliced thinly
    10 ounces sweet potato, peeled and cut into medium dice
    1 can 15.5 ounce black beans, drained
    4 cups chicken broth
    1 can 14.5 ounce petite diced tomatoes
    8 oz. extra lean ham, cut into cubes
    1/4 cup chopped fresh cilantro (or more to taste)


In a large saucepan, heat olive oil over medium heat. Add the onion and garlic. Saute until browned, about 5 minutes.
Add in the remaining ingredients (except the cilantro) and bring to a boil. Reduce heat and simmer for 20 minutes or until vegetables are soft but not mushy.

Turn heat off, stir in cilantro and let sit 5 minutes before serving.

Makes 8 servings about 1.5 cups each.
