Number of Servings: 8


    4 cups fat free chicken broth
    4 cups water
    2-3 bags frozen broccoli, cauliflower, carrots if desired
    1 Velveeta cheese block (This nutrition info was done with regular Velveeta, but use Reduced Fat or 2% if available to reduce fat and calorie content)
    Red Pepper flakes to taste (about 5-6 tsp)


1. Add chicken broth, water, and frozen vegetables to a large pot. Bring to a boil, then allow to boil for 15 minutes, until vegetables are very soft.
2. With a whisk or potato masher, mash vegetables into smaller pieces.
3. Chop Velveeta into large cubes. Reduce to medium-low heat, then add Velveeta to soup. Allow to melt for 5-10 minutes, then stir briskly to combine. Do not allow soup to boil again.
4. Remove from heat. Sprinkle with 5-6 teaspoons of dried red pepper flakes, to taste, or serve without red pepper flakes.

Serve immediately. Divide into 8 servings.
