    * Eggplant, fresh, 1126 grams roasted & peeled
    * Parsley, 87 grams chopped finely
    * Scallions, raw, 28 grams chopped
    * Garlic, 87 grams roasted & chopped
    * *Tahini, 3 tbsp
    * Olive Oil, 0.25 cup
    * *5 tsp. Cumin Powder
    * Pepper, black, 1 tsp
    * Chili powder, 1 tsp
    * Salt, 3 tbsp or to taste
    * *Lemon Juice of 1 lemon
    1/2 cup water


roast the eggplant + garlic then set aside to cool.
mix everything in a processor until fairly smooth.

tip: u may add roasted green peppers as well for extra flavor.

makes 38 servings. A serving = 1 heaped tbsp.

this dip can be used with pita chips or veggies, enjoy! :)
