Ingredients

    6 eggs
    3/4 c skim milk
    1/2 c shredded cheese
    3 slices bacon
    3/4 c broccoli florets, best if chopped into smaller pieces
    1/2 - 9" pie crust

    seasonings to taste

Directions

Preheat oven to 350 degrees.
Cut the bacon in half so you have 6 pieces. Cook the bacon until crispy and drain off the grease.
While bacon is cooking start preparing your pie crust. I cut it in half before rolling it out. It stretches out failry easily, I use a cuttting mat to help get a good rectangle than cut into 12 pieces. Spray a muffin tin with no-stick spray and place one piece of the pie crust in each. In a medium bowl mix together eggs with milk until blended together, set aside.
Fill each tin with broccoli then bacon. (1 piece will fill 2 tins when crumbles) and top with cheese..
Pour in the egg/milk mixture and any desired spices and make sure other ingredients are slightly covered so they won't burn.
Put in oven for approx.25 - 30 minutes . Quiche is done when top is slightly browned and knife comes out clean when inserted in middle.
Makes 12 pieces.
