    1 c cake flour
    1 1/2 c sugar divided in half
    12 large egg whites
    1 tsp cream of tartar
    1/4 tsp salt
    1 1/2 tsp vanilla
    1 1/2 tsp fresh lemon juice
    1/2 tsp almond


Preheat oven to 325'.

Lightly spoon flour into measuring cup, level with a knife. Combine flour and 3/4 c sugar, stir with whisk, set aside.

Place egg whites in large bowl, beat on high until foamy. Add cream of tartar and salt, beat until soft peaks form.

Add 3/4 c sugar, 2 tbsp at a time, beating until stiff peaks form.

Beat in vanilla, lemon juice and almond.

Sift 1/4 c flour mixture over egg white mixture, fold in. Repeat with remaining flour mixture, 1/4 c at a time.

Spoon batter into ungreased 2 bread pans or 10-inch tube pan. Break air pockets by cutting through batter with a knife.

Bake tube for 55 minutes, bread pans 45 minutes. Turn pan upside down and cool completely. Loosen cake from pan and invert onto plate.

Tube = 12 servings at 154 calories
Bread pans = 20 servings at 92.4 calories
