Number of Servings: 6


    Mushrooms, fresh, 3 cup, pieces or slices
    Bok Choy, raw-shreaded, 1.5 cup
    1 medium onion, chopped
    1 c carrots, sliced or shredded
    12 oz turkey breast
    12 oz chicken thigh (optional. If omitted, use 16-20 oz turkey)
    2 cans reduced-sodium chicken broth
    2 T soy sauce
    1 T sesame oil (optional)
    4 cloves garlic, minced
    2 t ginger, grated
    1 c instant brown rice (dry)


1) Place vegetables in crockpot. Cover with chopped turkey.

2) Combine chicken broth, soy sauce, sesame oil, ginger and garlic in a separate bowl. Pour over vegetables and meat.

3) Cook on low for 8-10 hours (high 4-5 hours). Stir in rice. Cover and let stand for at least 10 minutes.

Serves 6.
