Introduction

Ingredients

2 stalks celery, chopped
1 red onion, sliced
3 cups broccoli, cut up
4 cloves garlic, minced
1/2 t. ground ginger
1 t. brown sugar packed
1/2 t. crushed red pepper
1/4 cup lite soy sauce
12 oz. beef sirloin, cut into strips
1/2 cup cashews, dry roasted and unsalted
1 t. corn starch
1/2 cup water
Directions
Combine garlic, ginger, brown sugar, red pepper flakes and soy sauce in large bowl and marinade beef for an hour or longer.
Spray wok or saute pan with cooking spray. Add beef, reserving marinade. Cook until nearly cooked through. Pour off juices and add to marinade as necessary to brown.
Add celery, onion and broccoli and stir-fry until vegetables are tender crisp. Add marinade and cashews and heat.
Combine corn starch and water until smooth. Add to pan and cook until sauce thickens. If sauce is too thick, add more water.
Serve over brown rice or whole wheat spaghetti. (Calories do not include these.)
