Introduction

No oil, no egg, fruit and juice sweetened VEGAN muffins with almost 5 grams of protein and 5 grams of fiber PER MUFFIN at less than 170 calories. That is for the WHOLE MUFFIN. No sugar, refined sugar or funky chemical sweetener needed. Taste like carrot cake, banana nut bread and gingerbread all rolled into one. YOU WILL NEED A JUICER OR CARROT JUICE FOR THIS RECIPE! Ingredients

    *Hodgson Mill Whole Wheat Flour, 1.75 cup
    *Fresh Carrot Juice, 1 cup
    *Vanilla Extract, 1 tsp, 3 tsp
    Cinnamon, ground, 1 tbsp
    Baking Soda, 1 tsp
    **Truvia (Zero Cal Stevia) 1 packet, 4 serving
    Banana, fresh, 2 medium (7" to 7-7/8" long) )
    Walnuts, .0625 cup ( 1 TBSP), chopped
    *Manitoba Harvest Hemp Seed Nut - Shelled Hemp Seed, 1 tbsp
    Ginger Root, small piece juiced with carrots
    Bragg's Apple Cider Vinegar, 1 tbsp

Directions

Preheat oven to 375 degrees F. JUICE your carrots and ginger to make the equivalent of 1 cup carrot juice. Mash bananas and add all other ingredients and mix together well, but not too much because if you mix too much it will make your muffins too "stiff" and not very moist. Spray a muffin tin with cooking spray ( this recipe will make 7 muffins so you may need 2 tins), fill each muffin " cup" to almost full and bake for 25 minutes or until a toothpick inserted in middle of muffin pulls out clean. Makes 7 medium muffins
