    1 lb dried black beans
    1 small onion
    2 tbsp olive oil
    3 tsp minced garlic
    2 tsp salt


Rinse the black beans till the water runs clear. Cover them with water and let sit overnight. Discard soaking water and set aside.
In a large dutch oven, heat oil. Saute onion and HALF the garlic till softened. Add in black beans and enough water to cover the beans with an inch of water. Bring to a boil and simmer for one hour. After an hour, add the rest of the garlic and the salt. Simmer for another hour. Makes 6 cups total (one serving=1/2 cup)
