Introduction

An excellent vegetarian dish that everyone will love. An excellent vegetarian dish that everyone will love.
Number of Servings: 6

Ingredients

    2 lbs leeks- sliced 1/2" thick
    2 lg peeled carrots- sliced
    1/4 cup olive oil
    4-1/2 cups water
    1 cup lentils
    1 tbsp tomato paste
    1 tsp sugar
    1 1/4 tsp salt
    freshly ground pepper

Directions

In a large sauce pan or skillet, toss leeks and carrots with oil.
Cook over medium heat for 5 min. until lightly browned.
Stir in remaining ingredients.
Cover pan and simmer for 1 hour until lentils are tender & liquid is mostly absorbed.
Do not stir to keep lentils intact.
Enjoy!

    Amazingly good - what a comforting dish. I also cut the oil in half to 2 tbsp and used 3.5 cups of water rather than 4.5, and it came out perfectly. And yes, no need to soak the lentils beforehand. - 1/30/08

    This dish is really tasty and I also cut the oil down to 2 tbs. It is definetaly a dish that I will make again. It is a shame that leeks can be kind of hard to find. Thank you for sharing. - 3/21/08

    This was very easy and really yummy. I cut the water down to 3 1/2 cups, as recommended above, and it was the perfect consistency. I also cut the oil to 2 TBSP. A keeper! - 1/27/08

    Very easy and very good - also good cold as a salad w some vinaigrette. I used less oil (about 2 tablespoons) which was plenty. Next time I'd use less water. I was surprised, but this met the approval of my husband, too. - 7/16/07
