Ingredients

    1 cup uncooked quinoa
    3 cups cut and cubed butternut squash
    1 tsp olive oil
    2 cups chicken broth

Directions

4 servings evenly divided

In a shallow pan sprinkle 1 tsp of olive oil over the cubed butternut squash. Bake in oven at 400 degrees for 15 minutes. Remove, toss butternut squash and stir, cook for another 15 minutes. While butternut squash is cooking follow directions for cooking the quinoa using chicken stock.

Once butternut squash and quinoa are both cooked, mix together. Season to your liking (salt and pepper, or sage, etc.)
